Rice Krispie Treat Recipe



My go-to birthday party treat growing up has always been good old rice krispie treats. I remember bringing these yummy rice cereal treats to every birthday party to have during cake time, and I always looked forward to them because they were just that good. As I got older, I learned how to make them myself; now, I love to add vegan chocolate on top, too! Rice krispie treats are truly such an easy and delicious sweet treat, and they’re incredibly easy to make gluten-free and dairy-free. Here’s a simple way to make them yourself!

Ingredients

  • 3 tbsp vegan butter or coconut oil (I love to use Earth Balance vegan buttery sticks)

  • 5 cups gluten-free rice cereal

  • 10 oz mini marshmallows (approx. 1 bag; I think they turn out best with Jet Puffed mini marshmallows) 

  • ½ cup dairy-free chocolate chunks for topping (I like to use Enjoy Life chocolate chunks)


Directions

Step 1

Pour 5 cups of gluten-free rice cereal into a large mixing bowl. 


Step 2

Add vegan butter to a second bowl and heat up until melted. Add 1 bag of marshmallows to the bowl with the butter and mix until combined into one smooth mixture.  


Step 3

Pour melted marshmallow/butter mixture into the first large mixing bowl with the rice cereal.


Step 4

Mix marshmallows, butter, and rice cereal until combined. Sometimes I eat it at this point!


Step 5

Spray a cake pan with baking spray. Pour your rice cereal mixture into this pan. Press mixture into the pan until flat. 


Step 6

Add vegan chocolate to a third bowl and heat up until fully melted. 


Step 7

Spread the melted vegan chocolate with a spatula on top of the rice-cereal mixture in the pan until smooth. You can also sprinkle it with sea salt!


Step 8

Place the pan with your treats into the fridge to set for 30 minutes.


Step 9

Cut up into squares, and your allergy-friendly rice krispie treats are ready to enjoy!


Rice krispie treats will always be nostalgic for me. They were what I had when I could never eat cake like other kids at birthday parties and what I always choose to have on my own birthday to put my candle in. They are truly so simple to make, can easily be made allergy-friendly, and are ready in 30 minutes! I highly recommend them. They’re such an underrated dessert!
