One on One With The Executive Chef of The Golden One Center

             Have you ever wanted to attend a large sporting event, but thought twice since you have a food allergy? Well, I can relate to this quite often. I love sports and watching my favorite professional sports teams play in person. However, my allergy to peanuts often prevents me from eating at such events.  As someone who has a food allergy, I am mindful of what foods may contain peanuts. This made me think about how others with food allergies stay safe at these events. On the flip side of this, I’ve often wondered: How do chefs make food on a large scale and take all allergies into consideration?  I was given the opportunity to interview the executive chef at the Golden One Center, home of the Sacramento Kings basketball team. Chef Brien Kuznicki was able to offer some insight into their food allergy procedures at the arena.


Q: How do you tackle food allergies as a chef?

 A: Food allergies are taken incredibly seriously. For me, it's about creating a safe dining experience without compromising on flavor or quality. We have detailed protocols in place to avoid cross-contact.  


Q: How do you do it on a large scale for so many patrons?

 A: It starts with planning. We build allergy-friendly options right into our menus.  


 Q: What type of training did you undertake to ensure proper food safety protocols are followed for those with food allergies?

 A: I’ve completed certified food allergy training. Beyond that, I stay up to date with industry best practices and lead regular refreshers with the team. 

 

Q: How do you make sure the staff is properly trained?

 A: We require all culinary and front-of-house staff to undergo allergy awareness training when they’re onboarded, and we follow up with training. It’s not just about knowing the "what"—it’s about understanding the "why" so staff can think critically in real-time situations. 


 Q: How does this affect your meal plans and menus?

 A: Menus are designed with flexibility in mind. We build allergy-aware options into the core of our offerings. We also label offerings on menus to identify vegetarian and gluten sensitive options, so guests can make informed choices. 


Q: What are Golden One Center and the Sacramento Kings doing in regard to patrons with food allergies?

 A: We have clearly marked menus throughout the arena. Guests can also speak with trained staff at any food stand or contact us in advance for personalized options. We are committed to ensuring the best fan experience.

       

      I am truly thankful for not only Chef Brien, but the many other chefs who go above and beyond to include safe food options for individuals with food allergies. Their thorough routines and precautions in the kitchen may often go unnoticed, however they truly allow for individuals with food allergies to enjoy the event that they are attending.
